This is a very simple recipe, but one that I really like, so I figured I’d share it anyway. It’s a personal favorite when served with beef stroganoff, but of course is good any time you want some green beans that aren’t as boring as usual. The end result is green beans with a pleasant nutty taste, and the lemon juice really compliments the almonds.

Based very loosely on a recipe I found at allrecipes.com called Beef Stroganoff III, I made some beef stroganoff tonight, that was very tasty. I usually prepare green beans with almonds to go with my beef stroganoff. Ingredients
2 pounds beef chuck roast
½ teaspoon salt
½ teaspoon ground black pepper

For our Christmas celebration in Guadalajara I made some Egg nog, which was a nice taste of home for me, and a nice new treat for most everyone else. I found a good recipe here, and made a few modifications.
8 servings
4 fresh eggs 1/2 cup sugar 1/2 cup white rum 1/2 cup bourbon 2 1/2 cups whole milk 1 cup heavy whipping cream Ground nutmeg Directions

Along with the Cream of Potato Soup I made tonight, I made some Sweet Potato Paninis. These were also a hit. Adapted from this recipe.
I made a double recipe, and had enough sweet potatoes for 5 sandwiches.
Roasted Sweet Potatoes 1 medium sized sweet potato, peeled and sliced into 1/4-inch thick pieces 1/2 tablespoon olive oil 1/2 tablespoon brown sugar 1/4 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon paprika Directions

Tonight I made some cream of potato soup, adapted from a recipe I found at AllRecipes.com. Below is the recipe as I made it, along with some notes on possible modifications to make next time.
I served this to a group of friends tonight, and everyone seemed to enjoy it. The only possible adjustment I would make is to reduce the cayenne pepper for anyone who doesn’t like spicy foods.
